7 Salads To Try for a Week: Maintain That Summer Physique!

IMAG4285Excited about the arrival of warmer weather but feeling “some type of way” about the look of your physique?  Or maybe with all the parties, barbecues, and other type of gatherings you are concerned about being able to maintain your physique.  I mean really who wants to go on a crazy get-skinny-quick diet week after week and how realistic is it anyway??  How about incorporating different salads into your diet for a week?  I’m not talking about just eating lettuce leaves topped with a little red wine vinegar and a couple of tomato slices.  I’m talking about delicious, nutritious, colorful, filling salads that you can either eat as sides or even as the main dish.  

I’m only passing on what has worked for me and what I can realistically stick to for life and not just a couple of weeks while I’m trying to lose a few pounds quickly.  And I don’t have time to sit around making salads everyday so those I included here are easy and take little time to make.  I suggest throwing the ingredients into a large freezer bag or plastic bowl with a top and tossing together with or without your selected dressing….turn them into grab n go meals you can eat for the week!  So if you can relate to this then please read on.  I guarantee you that you’ll find something in here you like.  I even included a dessert salad as a bonus 🙂

Here goes!

Sweet Kale Salad


High in iron, calcium, antioxidants, and essential vitamins this salad will have you looking and feeling great.  What to toss:

  • Kale leaves
  • Chopped nuts such as almonds, pecans, or walnuts
  • Craisins
  • Red onions (go easy on the onions…you don’t want them to overpower the salad)
  • Shredded or cubed cheddar cheese (go easy on the cheese…you don’t want to add too many calories or too much fat)

Dressing: Per serving of salad, mix together 1 tablespoon olive oil, 2 tablespoons red wine vinegar, and 1 teaspoon honey.

Vegan Taco Salad

Yes, you can make taco salad without meat but with just as much protein!  I sometimes also like to take the contents and wrap in iceberg lettuce leaves to make it into lettuce wraps.  What to toss:

  • Spinach or romaine leaves
  • Black beans or crumbled black bean vegan burger (see my black bean vegan burger recipe here)
  • Chopped tomatoes
  • Chopped onions
  • Vegan shredded cheddar cheese (feel free to use regular cheddar if not concerned with it being totally vegan)

Dressing: Low fat ranch dressing

Bean Salad

Another that’s full of protein that can contribute to good heart health and a good digestive system.  What to toss:

  • Green beans
  • Garbanzo (chickpea) beans
  • Kidney beans
  • Red or sweet onions
  • Chopped tomato

Dressing: Per serving of salad, mix together 1/2 cup of cider vinegar, 1/2 tsp. garlic seasoning, and 1 tsp olive oil then toss with beans.

Spinach Power Salad


We already know spinach is considered a “superfood” that is high in essential vitamins and other nutrients.  But it is the other ingredients added into this salad that gives it the “power” it delivers.  What to toss:

  • Spinach leaves
  • Black beans
  • Shredded or cubed cheddar cheese (remember to go easy on the cheese)
  • Chopped tomato
  • Chopped nuts such as almonds, pecans, or walnuts
  • Craisins
  • Egg (optional)

Dressing: Low fat ranch dressing

Broccoli Salad


One of my faves, the broccoli in this salad offers benefits such as reducing the chance of cancer, arthritis, high blood pressure, and kidney issues.  The added ingredients add benefits such as being a good source of antioxidants (bell peppers) and biotin (onions).  What to toss:

  • Chopped broccoli sprouts (the more finely chopped the better in my opinion)
  • Chopped red onions
  • Chopped sweet bell peppers
  • Craisins
  • Chopped nuts such as almonds, pecans, or walnuts

BBQ Chicken Saladd:

Do you crave meat?  Well, here’s a salad that’s healthy AND allows you to enjoy some good ol’ BBQ chicken!  I got this recipe from Damn Delicious and I’m actually in the process of trying it out tonight.  What to toss:

  • Cooked chicken
  • Chopped tomato
  • Corn
  • Black beans, drained
  • Onion
  • Cheeses

Grape Salad

Mix it up a little with a dessert salad.  This is one of my creations and one of my faves…great for a summer night with a glass of red wine!  With this one, I wouldn’t recommend tossing the ingredients but instead layer them.  So here’s what to layer:  

  • Green grapes coated in cream cheese mixture
  • Whipped topping
  • Chopped nuts such as almonds, pecans, or walnuts
