Rice is one of those foods that can be made into so many different meal options. Â One of my faves is Southwestern rice. Â I love the combination of seasonings, veggies, and black beans that go into this dish and I typically like to top mine’s off with a little shredded cheddar cheese. Â And just because I no longer eat chicken (which was previously my meat of choice to add to Southwestern Rice) doesn’t mean this dish isn’t as tasty as it used to be. I find that this dish is great for lunch, dinner, and even meal prep because you can make enough to last a few days. Â And the best part about this tasty dish is that it is guilt-free. Â I’m sure you’ll love it!
