Southwestern Vegetarian Rice

Rice is one of those foods that can be made into so many different meal options.  One of my faves is Southwestern rice.  I love the combination of seasonings, veggies, and black beans that go into this dish and I typically like to top mine’s off with a little shredded cheddar cheese.  And just because I no longer eat chicken (which was previously my meat of choice to add to Southwestern Rice) doesn’t mean this dish isn’t as tasty as it used to be.  Check out my vegetarian version of this recipe below.


I find that this dish is great for lunch, dinner, and even meal prep because you can make enough to last a few days.  And the best part about this tasty dish is that it is guilt-free.  I’m sure you’ll love it!
