Quick n easy, Guilt-Free Shrimp Fajita

One of my fave parts of making this meal is throwing all the tasty ingredients into the tortilla!

This is one of my fave quick n easy, guilt-free meals to make….& it’s super tasty! There’s no need to go to a restaurant when I’m about to whip this up in the kitchen…and it takes less than 20 minutes! Another cool thing about this recipe is that you can “make it naked” if you want and cut even more fat and calories. Check the notes at end of recipe to see how. 


Extra tips: I like to pair this with a small salad using some of the the ranch dressing I mixed and then top with cheddar cheese tortilla salad strips or shredded cheddar cheese as shown in the picture. If you want to make this a “naked” Fajita just swap out the tortilla and instead spread shrimp mixture over chopped lettuce (make sure you have enough lettuce to make a salad) then top with ranch dressing. Enjoy!

Here’s a salad I like to pair with my shrimp fajita that’s topped with my “special” ranch dressing and crunchy cheddar tortilla strips. I do prefer darker leaf lettuce but was out of it on this day.
