Chocolate Peanut Butter Balls

So if you’re anything like me you may have the guilty pleasure called SNACKING!  Yes, I love to snack unfortunately.  But…snacking doesn’t have to be a bad thing.  And since I try (keyword TRY) to watch what I eat and maintain a certain weight then I have to look for alternative snacks…in other words, healthier snacks.  Here’s a very simple recipe for chocolate peanut butter balls that I really enjoy eating without the guilt of taking in a high level of calories and bad fats.  It’s also great for the kids, too.  So, here goes:

  • 1/2 cup oats
  • 1/4 cup chocolate peanut butter (you can usually find this alongside regular peanut butter in most stores)
  • 1/4 cup honey
  • 1/8 cup ground flax seed (optional)

Mix all of the ingredients together starting with half the oats and stirring into the peanut butter mixture then adding the other half of oats.  Stir until oats are well mixed in then roll the mixture into balls that are small enough to fit right in the middle of your palm or into a small cupcake cup as pictured.  You can eat them right away but I recommend letting them chill in the refrigerator for at least 5-10 minutes so that they can harden some.  Enjoy!
