So if you’re anything like me you may have the guilty pleasure called SNACKING! Â Yes, I love to snack unfortunately. Â But…snacking doesn’t have to be a bad thing. Â And since I try (keyword TRY) to watch what I eat and maintain a certain weight then I have to look for alternative snacks…in other words, healthier snacks. Â Here’s a very simple recipe for chocolate peanut butter balls that I really enjoy eating without the guilt of taking in a high level of calories and bad fats. Â It’s also great for the kids, too. Â So, here goes:
- 1/2 cup oats
- 1/4 cup chocolate peanut butter (you can usually find this alongside regular peanut butter in most stores)
- 1/4 cup honey
- 1/8 cup ground flax seed (optional)
Mix all of the ingredients together starting with half the oats and stirring into the peanut butter mixture then adding the other half of oats. Â Stir until oats are well mixed in then roll the mixture into balls that are small enough to fit right in the middle of your palm or into a small cupcake cup as pictured. Â You can eat them right away but I recommend letting them chill in the refrigerator for at least 5-10 minutes so that they can harden some. Â Enjoy!
