Many of us have heard about the benefits of kale. It’s nutritious and full of health benefits suchÂ as good amounts to calcium and fiber.Â Consistent consumption of kale also helps to ward off health ailments such as lowering the risk of cancer, lowering blood pressure, and of course aiding in weight management due to its low calories.Â But some may wonder what kale can be used for when it comes to meals and snacks. It’s definitely much more than a boring green leaf. Â So here are a few ideas that can help.
Just like about any other leafy vegetable you can make a great salad with kale.Â Pictured is my kale salad made with craisins, almonds, tomatoes, shredded cheddar cheese, hemp seeds.Â Then I drizzled it with my homemade dressing made with honey, olive oil, and apple vinegar (red wine vinegarette works great, too).
Kale makes a wonderful addition to vegetable soup.Â Along with chopped tomatoes, carrots, potatoes, green onions, corn, and celery cooked in tomato juice adding kale makes for a delicious, hearty soup that packs a powerful, nutritious punch..winning!
Kale can be added nutrition to almost any smoothie along with fruits and other vegetables.Â And you can easily mask the kale taste with fruits such as mixed berries and bananas or even as pictured flavors such as chocolate! Â All it takes is a handful or less of kale.
For my kale chips, I typically coat them in fat free cooking spray then toss them in seasoning such as Greek and garlic.Â I then bake them on a cookie sheet for about 8-10 minutes.Â It’s a great quick n easy guilt-free snack.
Ain’t nothing like a good, down home-cooked meal that includes a tasty side of greens!Â And you can make some really tasty greens with kale.Â Throw in other items such as your fave seasonings and meat and they’ll taste just the way grandma used to make them! Â
